RAW FENNEL AND CUCUMBER SALAD WITH CREAMY AVOCADO DRESSING
1 telegraph cucumber, sliced lengthways, then sliced 1 cm thick
A punnet of Italian cherry tomatoes, each sliced in half
1 fennel bulb, very finely sliced
1/3 cup toasted seeds
For the dressing
A handful of basil
Juice of 1 lemon
Flesh of 1 avocado
1/4 cup extra virgin olive oil
2-3 cloves of garlic
1/4 cup water
