Tonight we share with you one of favorite cake recipes, the most delicious pistachio cake topped with a dark chocolate drizzle. Wonderfully easy to prepare, this cake has a subtle salty nutty flavour, and is perfectly moist and naturally sweetened.
1 1/2 cups ground almonds
1 cup ground pistachios
4 free range eggs
1 cup muscovado sugar
1/2 cup coconut oil, melted
1 tsp baking soda
1 tbsp apple cider vinegar
100g good quality dark chocolate
a small handful of raw pistachios
Preheat the oven to 160 C.
Add all of the cake ingredients in to a food processor. Blend until smooth. Spoon the batter in to a greased cake tin, and then smooth out evenly using a spatula or spoon.
Bake in the oven for 35-40 minutes or until a skewer comes out clean once inserted.
Leave to cool before carefully transferring to a plate.
Melt the chocolate in a double boiler, and then drizzle over the cake. Sprinkle pistachios on top.
