These are seriously the most delicious little chocolate truffles, made entirely out of two ingredients, soft caramel medjool dates & cocoa or cacao powder. This recipe is also very easily adapted! try adding a dash of peppermint extract, orange zest or dehydrated raspberry powder for a truly delightful treat.
2 cups medjool dates, pitted
1/3 cup cocoa or cacao powder, plus additional for coating
optional: 1 teaspoon vanilla essence & sea salt to taste
Add the dates and cocoa powder to a high speed blender or food processor, and then pulse until you have a smooth & thick consistency.
Using your hands, roll mixture into small balls and place on a piece of baking paper. The mixture will be a little sticky, dont worry! lightly coat your hands with a little water or coconut oil to make it easier to manage.
Roll each ball in the cocoa or cacao powder.
Place the fudge balls in the fridge or freezer for at least an hour to firm up.
Makes 10-15 truffles. Store in the fridge or freezer for a frozen fudgy treat.
